Carlo Cracco, Milan's beloved gastro chef

Last saturday my brother and I received the visit of my parents in Milan. The great thing with my parents (on top of being the best parents in the whole world off course!) is that they just love to eat well. No wonder I became a such foody with a mom who developed an addiction to dark chocolate and a Dad who systematically reproduces michelin starred chef recipes at home (with his own twist).
Therefore, when ever we are meeting outside of Geneva, we always try to go to new restaurants.



So we went on to try a place I was dying to go to for a few months now : Carlo Cracco. Carlo Cracco has been the favourite milanese place of my friends Stefano and Xin for years. They have been talking about its risotto so many times, I think that before going I already knew how it tasted! Cracco is a two Michelin star chef that worked in the best places in Italy as well as for Ducasse and Loiseau in France before opening his own restaurant a few years ago.

We ordered the little Menu in order to have a complete 360degree view of Cracco's kitchen. As a first starter, we received a simple but outrageously delicious caprese (mozzarella, tomato and basilico) where the basilico was in a concentrated emulsion mixed with olive oil and the tomato (super tasty) had a mousse kind of texture .


Then, before the A+ safran risotto, we received pig's cheek cooked to perfection with their own fat ! Following was a cubicle milanese style veal piece with polenta chips. Presenting this italian classic dish in such a way was really original and fun.

Then, as a dessert, I enjoyed an emulsion of mascarpone with lime and rhum that was so light, it was almost flying above my plate!

The rest of the table received one of the most original dessert I ever tasted which was chocolate fried balls with a bitter orange sauce topped with caviar ! The mix of chocolate and caviar was shocking but thanks to the bitter orange its was actually great. You could really taste the chocolate first, then mix with the salty caviar.
For me, Carlo Cracco is for sure a great chef who manages to express both his technical skills and his creativity in re interpreting the classic dishes of Italian cuisine.

It is an experience worth living when in Milan (and it's open on saturday !!)
